Chocolate Mint Chocolate Cookies

I’ve had these mint chocolate chips sitting in my pantry since Christmas time. I bought them to go in the hot chocolate bar I had set up for my cousins and nephew over the holidays. Needless to say they were passed up for more kid-friendly flavours. Apparently marshmallows are way more exciting! Overtime I would open the pantry, see them and think, ‘I had better do something with those!”

Now most chocolate based recipes I test turn out a hair on the dry side from the addition of cocoa, but these cookies were moist, soft and delicious. Even though it’s spring, the smell of Christmas was wafting through the air! They met and exceeded the expectations I had for these cookies!

Chocolate Mint Chocolate Cookies

Makes 4-5 dozen

1 cup butter

1 cup brown sugar

1 cup white sugar

2 tsp vanilla extract

2 large eggs

2 cups white flour

1/2 cocoa powder

1 tsp baking soda

1/2 tsp salt

2 cups mint chocolate chips (I used Chipits and the whole package)

1 cup chocolate chips (or white chocolate chips)

Set oven to 375 degrees. Cream butter, both sugars until light and fluffy. Add eggs and vanilla and mix again.

In a separate bowl mix cocoa powder, flour, baking soda, and salt then gradually add to the wet ingredients until just mixed. Add the mint chocolate chips and the chocolate chips. Mix until distributed.

Form into one inch ball and bake 8-10 minutes on the centre rack of the oven.  I added some green sprinkles from the pantry at my toddler’s  request, but it is absolutely not necessary.
