Triple Chocolate Almond Cookies

I told my husband, ” I may even have time to make cookies today!” Usually he says something like, “Great”, but this time he asked me to make these Triple Chocolate Almond Cookies. I can’t blame him! They are nutty and delicious. When you bake them the almonds rise to the top and get a rich roasted flavour. The cocoa and salt balance the richness and they are just terrific! He’s more of a salty snack person but these are a total hit no matter what people’s snacking preference. I’ve adapted the recipe from another Blog to have whole almonds and bunch more chocolate chips. I don’t mess around with chocolate chips! Took a few edits but I think it is now PERFECTION! They are a beautifully soft cookie with the crunch of whole almonds.

Triple Chocolate Almond Cookies

Makes 5 dozen

2 1/3 cups all-purpose flour

3/4 cup cocoa

1 tsp baking soda

3/4 tsp salt

1 1/4 cup butter(softened)

1 cup white sugar

1 cup brown sugar

1 large egg

1 tsp vanilla

1 package(225g) white chocolate chips

1 cup semi sweet chocolate chips

1 1/2 cups whole almonds

Set oven to 350 degrees. In a small bowl mix the flour, cocoa, baking soda and salt and set aside.

In you mixer, add the butter and both sugars and beat until light and fluffy. Add the egg and vanilla to the mixture and combine. Gradually add the dry mix to the butter mixture until it makes a thick batter. Add the whole almonds, white chocolate chips and chocolate chips and mix until evenly dispersed.

Roll the dough into golf ball sized balls, 12 to a cookie sheet. Bake at 350 degrees for about 14 minutes. Cool and enjoy!Jess
