Spinach and Strawberry Salad
Spring and Summer make me start wanting to eat salads. Surprising, I know, but something about the warm weather makes me actually desire something raw and fresh! One of my favourite salads is spinach and strawberry. Now I accidentally overbought sunflower seeds and I was looking for another way to use them. They are the perfect addition in this dish. I whipped up a simple sweet vinaigrette, and it’s the perfect fresh compliment to any dinner. This recipe makes a large side salad for 2, or a small side salad for 4. Spinach and Strawberry Salad
3 -4 cups raw spinach
6 medium to large strawberries quartered
1/4 cup sunflower seeds
1/4 of a large red onion sliced into thin strips
Dressing
2 tbs white sugar
3 tbs red wine vinegar
2 tbs olive oil
Salt and pepper to taste
Place all salad ingredients in a medium-large bowl. Mix dressing in lidded container and shake to mix. Dress right before serving. Enjoy!
