My Favourite Cookies- Oatmeal Chocolate Chip with a twist

Okay, big claim here, I know! But these really are the BEST oatmeal chocolate chip cookies you have ever had!!!

My middle school best friend’s mother(shout out to Kathryn and Estelle, so many good memories with you) made these amazing oatmeal chocolate chip cookies, and I have spent my adult life trying to replicate them. Or recreate my memory of them. Finally I’ve achieved success. After probably trying 100 recipes, I stumbled along this one from Dinner with Julie, and it was the one!

Now it is not the prettiest cookie, flat and brown, but the flavour and texture are sublime! It’s secret- is shredded coconut. When you taste the cookie, you wouldn’t guess it, but it enhanced the texture of the oatmeal and the flavour of the chocolate. It has the perfect crispness to the outside, while still remaining soft and chewy!

So easy to make and these ones will be in high demand for sure!

My Favourite Cookies- Oatmeal Chocolate Chip

Adapted from Dinner with Julie

Makes 3 dozen

  • 1 cup butter
  • 1 cup white sugar
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla
  • 1 1/4 cups flour
  • 1 1/4 cups quick oats
  • 3/4 shredded coconut
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup chocolate chips

Set oven to 350 degrees.

In mixing bowl combine butter and both sugars until well mixed. Add egg and vanilla and mix again.

If you are a careful baker, I suggest mixing all the dry ingredients(flour, oats, coconut, baking soda, baking powder, and salt) in a large bowl then adding it to the butter mixture, but if you are like me, sprinkle all the dry ingredients on top and then combine. I only like to dirty one bowl if possible! Add the chocolate chips and combine again.

Roll into balls around the size of a ping pong ball, the recipe should make 3 dozen.

Bake at 350 degrees for 12-15 minutes until golden, then remove from the oven, cool, then enjoy!
