Healthy Banana Oatmeal Chocolate Chip Muffins

So we all know I like to dirty as few bowls as possible. Today I was crunched for time before a play date and planned to make Banana Bread which is a guaranteed hit, but takes about an hour to cook so I had to think of a better idea. I found a great recipe for healthy Banana Muffins at allrecipes.com but I made a few edits to bring up the flavor, and made it in one bowl so I had less dishes to do so I could be play date ready in time! These muffins are oil free, butter free and whole wheat.  They turned out great and were a huge hit with the toddlers and mommy’s alike. It took thirty minutes from the moment I started gathering ingredients until I pulled these babies out of the oven.

Healthy Banana Oatmeal Chocolate Chip Muffins

Makes 12 Muffins

  • 2 large eggs
  • 1/2 cup unsweetened apple sauce
  • 1/4 milk
  • 1 tsp vanilla extract
  • 2 overripe bananas
  • 1/2 cup sugar
  • 1 1/2 cup whole wheat flour(all-purpose will work if you do not have whole wheat)
  • 1 cup quick oats
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup chocolate chips

Set oven to 400 degrees Fahrenheit. Grease 12 muffin tins. You will see in my photos that I used a liner. I forgot these are an oil free recipe so they stuck to the liner a bit. Next time I will grease the tin for sure.

Put eggs in mixer. Beat on high for about 2 minutes or until eggs are frothy looking. Stop mixer. Dump in the applesauce, milk, vanilla and whole banana. Mix for a minute or two until the banana is mostly broken up. Stop mixer again. Sprinkle the sugar, flour, oats, baking powder, baking soda and chocolate chips on top. Mix on low until combined. The texture might still be lumpy. Scoop the mix into the greased muffin tins and bake at 400 degrees for 15-18 minutes. Cool and enjoy!
