Easy Chickpea Salad

Whenever I have vegan friends come for dinner last minute, this is my go to dish to make sure there is one more item on the table for them. The ingredients are so simple and regularly on hand in my house. It takes about 5 minutes to mix up and adds some much needed substance to supplement our dinner which usually includes non-vegan dishes. On the weekends this is a great salad to make and have in the fridge. It last for about 4 days so it’s a good option to pack in lunches or in a mason jar for a go to snack throughout the week. Fantastic for meal prep!

This serves 4 as a side dish with other dishes, or two servings as the only side or lunch/snack size portions.

Easy Chickpea Salad

  • 1 can of chickpeas, drained and rinsed
  • 1/2 red onion finely chopped
  • 1 red pepper finely chopped
  • 1 bunch of cilantro finely chopped
  • Juice of 1 fresh lemon
  • Salt and pepper to taste

Drain and rinse the chickpeas. In a medium size bowl mix the chopped onion, red pepper, cilantro and chickpeas. Juice one fresh lemon and add salt and pepper to taste and mix. Beautiful and easy to whip up!
