Dijon Parmesan Crusted Chicken
Oh man! This is a recipe filled with a lot of history between my husband and I. One of the first times my husband cooked for me, he made me this chicken recipe. And I won’t say it was what won me over, but it sure didn’t hurt. It was delicious! His original recipe differs a bit from how it’s evolved over ten years.
When he makes dinner, it’s still often this dish and it’s become one of my quick and easy go to recipes just for us, or to feed a crowd. It’s never let me down!! Definitely a crowd pleaser.
Dijon Parmesan Chicken
4-6 chicken breast
1/3 cup vegetable oil or melted butter
1/3 cup Dijon mustard(grainy or smooth will work)
1 cup bread crumbs
1 cup shredded Parmesan
Pepper to taste
Set the oven to 400 degrees Fahrenheit. In a bag or a bowl mix together the oil or butter with the Dijion. Add the chicken and coat throughly.
In another bag, mix the Parmesan, bread crumbs, and pepper. Mix until evenly distributed. Transfers the chicken breast one at a time, and shake in the bag to coat. Transfer to a cookie sheet or oven safe ceramic or glass pan.
Bake at 400 degrees for 25-30 minutes depending on the size of the chicken breasts.
