Rosemary, Dijon, and Lemon Marinade for Chicken
Over the weekend my family was in town visiting and I wanted to make them dinner for when they arrived. It’s already the start of September now and my Rosemary plant is doing really well but without too much time before frost comes I wanted to start using it up! The funny part is that I used to think I didn’t like rosmary. I had only had it dried before, but I put some fresh rosemary in chicken stock for my homemade chicken noodle soup and loved it! I discovered that the fresh was so much milder than dried and it gives a lovely fragrance to poultry dishes. I thought a chicken marinade would fit the bill for an easy crowd pleaser, show off my husband’s superb grilling skills and use up that lovely fresh rosemary.
Next up is what flavours go well with chicken? Dijon mustard is in my other favourite chicken dish- my husband’s Dijon Parmesan Crusted chicken. Garlic makes most things better and fresh lemon always brightens poultry’s flavour. Mix them all together with some olive oil, salt and pepper, and it makes a great quick marinade with a flavour that really shines through in the finished product.
Rosemary, Dijon, Lemon Marinade
Makes enough marinade for 6-8 chicken breasts
- 1/2 cup olive oil
- 3 tbs grainy Dijon mustard
- 1 lemon (juice)
- 2 tbs chopped fresh rosemary
- salt and pepper to taste
In a small jar mix all the ingredients then pour over the raw chicken. Allow to marinate 20-60 minutes then cook in your preferred manner, roasted or grilled (as photographed) recommended.
